Banana Nut Muffin
February 23, 2008
These muffins are a refreshing alternative to store-bought cookies and are a cost-friendly snack item for the kids’ pack lunches or for take-alongs to family picnics. For an interesting variation, I made use of the versatility of the recipe by substituting, on half of the muffin batter, my leftover blueberries and blackberries in place of the mashed banana. Platanos fritos con frijoles negro y crema mexicana~definitely one of my gastronomic pleasures! You see, if there is something I should share about me (one that is worth a discussion across a psychiatrist’s desk, I think), it is that I am a sucker for kindness. Show me one little good thing and you have me hooked for life. Take the case of Gay. During our early days of blogging, she was nice enough to guide Read more

Pork Menudo

When you say menudo in California, what usually comes to mind is a spicy Mexican soup made with tripe. However, the menudo recipe we have here is the filipino version~ a colorful stew made with chunks of pork, liver, potatoes, carrots, bell peppers, garbanzo beans and a thick tomato base. Unlike its Mexican namesake, filipino menudo leans towards a slight sweetness due to the addition of raisins. Read more
