Caramelized Banana with Honey, Mascarpone and Mint

A friend of mine gave me a big tub of mascarpone cheese and with no recipes in mind to make use of it for, I googled “mascarpone” and found this caramelized banana recipe at Recipezaar.com. When the author said that her daughter licked the bowl clean, she wasn’t exaggerating! I scraped up the sweet and creamy sauce on my plate to its last sweet and creamy drop!

Caramelized Banana with Honey, Mascarpone and Mint

Makes 4 Servings

4 under-ripe bananas, peeled and sliced lengthwise
4 tbsps honey
4 tbsps mascarpone
3 to 4 fresh mint leaves, sliced thin

In a non-stick skillet, heat honey over low heat.

Add bananas and cook, around one minute. Add mascarpone. Stir until combined with honey and bananas are coated with sauce, around 30 seconds to 1 minute.

Remove bananas from sauce. turn off heat. Add mint to sauce and pour over the bananas.

TIPS:
1) It’s very important to start with very firm, under-ripe bananas or you’ll end up with “mush”.

    Oh my goodness Lalaine, this dish is heavenly good! Rob and I kept eating it. It was so good that we ate all of it. Thanks for fixing my sweet tooth craving.
