Caribbean Bananas
Candied with brown sugar and spiked with rum, these caribbean bananas are the perfect fruity finish to a meal. Enjoy with a dollop of whipped cream and you’ve got sweet heaven!

Makes 8 Servings
Ingredients
4 medium bananas
1 tbsp lemon juice
1/4 cup light rum
1/2 tsp allspice
1/3 cup packed brown sugar
1/4 cup butter
Procedure
Heat oven to 35o F.
Place butter in a baking dish and heat in oven until melted, rotating dish to coat bottom.
Peel bananas. Cut each banana crosswise into halves and cut each half lengthwise again into halves. Arrange in buttered baking dish with cut side down.
Combine lemon juice, brown sugar and allspice. Drizzle over bananas. Bake uncovered for about 15 minutes.
In a pan, heat rum until warm, ignite and pour over bananas. Place bananas on serving plates, spoon rum sauce over and serve warm.
