Chicken with Apples and Brie



You know how, sometimes, in the heat of the moment you’ll say mean little things and take quite a pleasure in doing so? Then, after awhile, when the storm has passed and the situation got chewed on a bit, you wish you could take back the words that have left your lips? My husband went home excited as a schoolboy last night. “Be”, he said, “I won this Costco cookbook at work and you are going to love it!” I looked at the book. Love it. I looked at him. Love him. In shame, I mumbled thank you. In my mind, “Dude, sorry I called you a toad“.

Chicken with Apples and Brie

This chicken with apples and brie is the first recipe I tried from the cookbook. I really love its simplicity in preparation and its flexibility in ingredients. You can use other types of cereal coating or cheese filling and still have almost no-fail results. However, I highly recommend Granny Smiths for this dish, as these apples hold best during cooking and their natural tartness compliments the saltiness of the cheese. If you do need to substitute, Jonathans and Cortlands are good choices.

 

Makes 4 Servings

Ingredients

4 (4 oz each) boneless, skinless chicken breasts
2 large Granny Smith apples, peeled and sliced thin
1/2 lb brie cheese, rind removed and sliced thin
1 cup corn flakes, crushed
1 large egg, lightly beaten
salt and pepper

Procedure

Pound chicken breasts until thin. Lightly season with salt and pepper. Spread on a flat surface and fill with sliced apples and Brie. Wrap up the ends and then the sides of chicken to form bundles. Secure with toothpicks. Chicken can be prepared up to 1 hour ahead of time and refrigerated until ready to bake.

In a deep bowl, lightly beat egg with salt and pepper. Dip the bundles in egg wash and then roll in crushed corn flakes to fully coat. Arrange seam down in a baking dish.

Bake in a 375 F oven until cooked through, around 20 to 30 minutes. Let stand a few minutes before slicing.

    I love any stuffed/rolled chicken recipe. I make one with queso fresco but I have to try this one with the apples and the Brie cheese. It just sounds heavenly :)
