Chicken with Twenty Cloves of Garlic
If you have ever contemplated, have been on the verge or have actually endured a divorce, you know it is a painful, confusing crossroad. Knowing you haven’t been happy for the longest, knowing it is for the best, does not in any way lessen the bleeding. It still hurts like a mother…….! Every morning, you get up unsure of where and how you’ll find your next breath, wondering if you’ll even make it through the day. But in the scheme of life, the day becomes a Monday, and a Tuesday, and a Wednesday, until the day becomes THE day you are infront of the stove cooking this chicken with twenty cloves of garlic, suprisingly thankful that you can relish without hesitation all that pungent garlic pieces as you have nobody to disappoint come night. So there you are, with a flavorful piece of chicken in your mouth, realizing for the first time in months that you are going to be just fine.
Makes 4 Servings
Ingredients
4 boneless, skinless chicken breasts
20 cloves garlic, peeled
1 cup chicken broth
1 cup caesar salad dressing
1 tsp parmesan cheese, grated
1 tsp olive oil
Procedure
Heat oil in a skillet over medium-high heat. Add chicken and cook until lightly browned on both sides, turning after 2 to 3 minutes. Add garlic cloves and cook for about 30 seconds, stirring to prevent from burning.
Pour in chicken broth and caesar dressing, stirring to combine. Cover with lid. Continue to cook until chicken is done and sauce is reduced.
Divide chicken and garlic cloves onto serving plates. Spoon remaining sauce and sprinkle parmesan cheese onto chicken. Serve hot with roasted vegetables or over pasta.
