Chocolate Truffles



Named after truffles fungus due to their irregular shapes and “dirty” look, these confectionery are an absolute indulgence with their melt-in-your mouth texture. Chocolate truffles are traditionally made with a variety of centers: nougats, caramels, fruits, nuts and berries. The recipe that we have here is the swiss kind, made with ganache~cream, melted chocolate and liquor. Very easy to prepare, the only difficult part in making them is eating just one!

Chocolate Truffles

Before you start, check out techniques in melting chocolate.

 

Makes 28 Servings

Ingredients

2/3 cup heavy cream
12 oz high quality semi-sweet or bittersweet chocolate
2 tbsps butter
2 tbsps rum
1/3 cup unsweetened cocoa powder

Procedure

In a saucepan, boil heavy cream. Add chocolate, whisking continously until melted. Remove from heat.

Stir in butter and rum. Refrigerate until set and hardened, around one hour.

Using a tablespoon or small ice cream scoop, divide mixture into 28 balls. Using hands, roll into balls. Refrigerate to set, around 15 to 20 minutes.

Toss truffle balls in cocoa powder to coat. Keep in refrigerator until ready to serve.

TIPS:
1) Divide mixture into two and work in batches as mixture melts quickly.
2) Chill tablespoon or scoop to prevent truffles from sticking.
3) If preferred, truffles can be dipped in melted chocolate or coated with chopped nuts.

    I’d like to try this one out. Did you know, there’s a store in Cubao called Chocolate Lovers and they sell all sorts of chocolates in blocks… and anything related to chocolate.

    Really? I haven’t been home for awhile, at least 2 years, so I am not familiar anymore with the latest “hotspots”. But I sure am taking note of that~chocolates are my Achilles’ heel!

    Wow! It is always exciting to start our own business and be our own boss. I suppose this is why I (partly, that is) started blogging. Maybe in 10 years I’ll get enough website traffic, I can finally quit my day job! Hahaha, that would be a dream. For now, The CookMobile buys me new shoes every month! wink!

    Anyway, I am not sure how I can be of real help in this endeavour of yours as I am in the US and am not familiar with establishments for this sort of thing in the Philippines.
