Citrus-Glazed Scallops
I love scallops. They’re easy to prepare, cook fast and need only a few ingredients to shine. Try the pancetta-wrapped scallops in the archive as an appetizer and this one prepared with citrus glaze as an entree..

Makes 4 Servings
Ingredients
12 pcs large scallops
4 tbsps peanut oil
2 garlic cloves, peeled and minced
juice of one large orange
juice of one lemon
1 tbsp soy sauce
1/2 tsp grated orange peel
freshly-ground pepper
salt
Procedure
Rinse scallops and pat dry. Season with salt and pepper to taste.
In a large skillet, heat 3 tbsps of the peanut oil over high heat. In a single layer, cook scallops until browned on the outside and just opaque in the center, about 2 minutes per side. Remove from pan and arrange on a plate.
Add remaining 1 tbsp of the peanut oil to drippings in pan. Saute garlic until aromatic, around 30 seconds. Pour in lemon juice, orange juice, soy sauce and grated orange peel. Stirring frequently, allow mixture to boil until thickened to a syrup. Pour sauce over the scallops and serve hot.

Gosh I would just love some scallops because I am a seaffod freak (lived in florida before my boyfriend Big Bear had to move to Atlanta because of a legal problem).
In fact we had seafood for Christmas dinner. I fixed fake crab meat (with a K) over pasto and a salad with dried salted codfish. I got some really good deals at Costco (ant they accept food stamps).
