Cookie Press
Trash for some, treasure for another. I found this cookie press set, still boxed and wrapped, at my neighbor’s yard sale. I was passing by from my morning jog and she stopped me with a friendly hello. She had various odds and ends spread on a long table with asking prices ranging from $6 to $10. Dear me, $6 to $10 for items that looked like they were so ready to rest forever in the dumpsters! Then out of the corner of my eyes I saw the cookie press set~she had it priced for $1.00! I rummaged through my purse for four quarters, keeping any sign of excitement in check. It was just too much trying to temper down the smile on my face! I certainly didn’t want her to realize I would have gladly paid ten buckaroos until I had the treasure safely in my kitchen!

Pressed cookies, such as Spritz, obtain their shapes by the dough being forced through a cookie press. These cookies are of a very tender and crisp texture.
TIPS:
1) Dough should be kept pliable to obtain well-defined patterns on cookies.
2) Chill dough slightly if it becomes too soft.
3) Cookie shapes are retained better if pressed onto a cold cookie sheet.
4) Cookies of like patterns should be baked on the same sheet so they’ll finish baking at the same time.
5) Cookies are done when set with delicately browned edges.
