Grilled BabyBel and Spinach Sandwich
One of the most emailed, printed and linked to recipes in The CookMobile is the blackberry grilled cheese sandwich I posted a few months ago. To be honest, the response the sandwich received took me by suprise as I thought it was a weird enough combination that only I can appreciate. Anway, heartened by your acceptance of the blackberry sandwich, I am here again with another of my intriguing sandwich find. Let me describe the flavors: each bite is a hint of roasted garlic, the sweetness of the apricot jam balances the saltiness of the semisoft cheese…convinced you yet? Give this grilled babybel and spinach sandwich a try, will yah, and let me know what you think?

Makes 4 Servings
Ingredients
1 tbsp olive oil
1 garlic clove, peeled and minced
2 cups baby spinach
2 tbsps butter
8 slices multi-grain or whole wheat bread
2 to 4 tbsps apricot jam
8 mini BabyBel cheese, sliced into halves
Procedure
In a medium skillet, heat olive oil over medium heat. Saute garlic briefly. Add spinach leaves and cook until slightly wilted. Remove from pan and set aside.
Melt butter over high heat. Grill bread slices on one side until evenly browned, around 1 to 2 minutes.
Spread apricot jam on unbrowned side of 4 bread slices. Top with slices of cheese and large spoonful of sauteed spinach. Cover with the other bread slices. Slice sandwiches into two.
Tip:
You can substitute Brie for the Babybel.

I hadn’t thought about grilling with BabyBels, but why not? I’m sure they must melt really well. And the apricot jam would go really well with it. I’m intrigued!
