Lasang Pinoy 22 Entry-Binagoongan Rice
Through the kindness of another food blogger, Gay of A Scientist in the Kitchen, I discovered this blogging event called Lasang Pinoy 22, the Rice Challenge. If you read through her comments section, you’ll discover a person nice enough to help another. Thanks Gay!So here I am, RICING to the occasion with my recipe for Binagoongan Rice. I am providing a recipe for that here but check out my shrimp fried rice recipe for a discussion of the Filipino rice culture and another way to make use of leftover rice.

Makes 4 Servings
4 cups cold rice
1/2 onion, finely chopped
2 tomatoes, finely chopped
1/4 cup bagoong (shrimp paste)
2 cloves garlic, minced
1/2 lb pork belly
1/4 cup vinegar
1 bay leaf
vegetable oil
2 cups water salt and pepper
In a sauce pan, boil pork belly with vinegar, bay leaf, garlic, and water until tender, adding more water as necessary.
Remove from heat. Drain and reserve juice. Slice to thin strips.
In a wide pan or skillet, heat oil. Saute onions until tender.
Add pork slices. Saute until pork is slightly browned.
Add in bagoong and continue to stir for around 3 to 5 minutes.
Add in tomatoes, stirring until tomatoes soften.
Pour in reserved pork juice.
Simmer until pork is very tender and most of the juice is absorbed, with the natural oils from the pork seeping through.
Add in rice, stirring to combine with the sauteed pork and bagoong mixture.
Serve hot.
TIPS:
1) As the flavors of the rice are already overpowering, pair it with lightly seasoned fish such as broil-in-foil tilapia (broiled mojarra) and grilled eggplants. Yum!

i love this topped with an egg. (gawd, the cholesterol! LOL) but this is indeed yummy… maybe i’ll have the Thai Bagoong Rice at Bento for lunch.

fabulous. i love binagoongan but i haven’t made it myself at home fearing that the smell (which i think is absolutely beautiful and appetising) might drive my hubby to move out , he he. this is such a classic filipino dish, sarap.
