Marinated Cucumber Relish

These thinly-sliced cucumbers are a delicious accompaniment to fried fish or pork. I added an asian twist to the relish by using sesame oil instead of olive oil in the marinade which gave the dish kind of a nutty aroma and flavor.

Marinated Cucumber Relish

3 cucumbers
1 cup cider vinegar
3 tbsps sesame oil
1/4 cup granulated sugar
1/8 tsp kosher salt
1/8 tsp black pepper, freshly cracked

Peel a strip of skin lengthwise on four sides of cucumbers. Slice as thin as possible.
In a non-metallic bowl, combine oil, vinegar, salt, pepper and sugar.
Add in cucumbers. Marinate in refrigerator for at least 1 hour to allow flavors to combine.

TIPS:
1) The quickest way to make strips on cucumbers is a vegetable peeler. It will also preserve most of the cucumber meat while peeling.
