Mixed Berries with Mascarpone Cream

Here is something sweet
A luscious berry treat
That need not the kitchen heat
Yes, the poetry sucks
But oh my! this dessert rocks!

Mixed Berries with Mascarpone Cream

Makes 4 Servings

2 cups mixed fresh berries (blueberries, red and golden raspberries, blackberries)
1 cup mascarpone cheese
1 cup heavy whipping cream
1 cup superfine sugar
1/4 tsp lemon or orange extract
juice from one orange
4 tbps honey

Chill whipping cream and mascarpone for around 30 minutes. In chilled bowls and using chilled beaters, beat whipping cream, mascarpone, sugar and extract until soft peaks form.

Wash berries well. Squeeze juice of orange and drizzle honey over fruits. Toss lightly to coat.

Arrange fruits in serving bowls and spoon mascarpone cream on top. Garnish with frosted berries.

Frosted Berries

assorted berries, washed and pat dry
1 egg white, lightly beaten
sugar

Brush berries lightly with egg white. Roll gently on sugar.

Arrange single layer on a parchment-lined sheet.

Allow to dry for around 30 minutes to 1 hour.

Tips:
1) The mascarpone cream can be prepared and kept covered in the refrigerator for up to 4 hours. However, only assemble dessert minutes before serving.

    This looks so delicious. Wish the variety of mixed berries were available here.

    I guess were lucky in California…buying fresh berries is just a matter of going to the nearby supermarket. But actually, I bought these berries at a farmer’s market close to work. Pretty cheap at 4 baskets for 14 dollars.
