A bain marie is a cooking technique wherein one container with food to be cooked is placed in another, larger pan containing water that is at the simmering point.

I usually place my prepared embutido rolls on a roasting rack and place that  rack on a large pan containing water. I then cook everything in the oven. Hope this helps.</description>
