Roasted Salmon with Cilantro-Pesto
This roasted salmon with cilantro-pesto recipe is a simple yet elegant entree that features a delicate blend of cilantro, nuts and garlic. It is delicious paired with tossed greens with vinaigrette and crusty bread.

Makes 4 Servings
4 (6 oz each) salmon fillets
salt and pepper
vegetable oil
cilantro-Pesto
Season salmon fillets with salt and pepper to taste.
In a wide skillet, heat vegetable oil, around 2-3 tablespoons.
Cook salmon skin side up until golden, around 3 to 4 minutes.
Transfer to an oven-safe baking dish. Bake at 375 F until cooked through, around 8 to 10 minutes.
Transfer to serving plates. Drizzle with cilantro-pesto.
Cilantro-Pesto
1 cup fresh cilantro leaves
5 tbsps olive oil
4 tbsps white cooking wine
3 tbsps parmesan cheese,grated
2 tbsps almonds, slivered
2 cloves garlic
1/8 tsp salt
Puree all ingredients in blender, pulse first until finely chopped, then puree, scraping frequently until smooth.
TIPS:
1) Salmon is equally delicious in this shallot toasts with creme fraiche and smoked salmon recipe!
