Sarciadong Isda
Sarciado, which means “with sauce”, is another excellent way to re-use leftover fried fish. Like the bangus with tausi recipe in The CookMobile archive, chopped onions, garlic, and tomatoes are sauteed in oil, a small amount of water or broth is added, and fish pieces are then simmered in the resulting juice to absorb flavor. Whether using leftover or not, fish is fried beforehand to prevent from falling apart while cooking in the sauce.

Makes 4 Servings
Ingredients
2 whole yellowtail scad, cleaned and gutted
3 medium-size tomatoes, chopped
1 medium onion, peeled and sliced
2 cloves garlic, peeled and minced
1 tbsp fish sauce (patis)
2 cups water
2 eggs, lightly beaten
frying oil
salt and pepper
Procedure
Wash fish and pat dry. Lightly season with salt and pepper. In a pan, heat around 1 inch deep oil. Gently slide in fish and fry, turning once, until both sides are lightly browned but not fully cooked. Remove and set aside.
In a skillet, heat aabout 2 tbsp of oil. Saute onions and garlic until fragrant. Add chopped tomatoes and stir mixture regularly until softened. Pour in fish sauce and continue to cook for an additional 1 to 2 minutes.
Pour in water and allow to a gentle boil. Gently slide in fried fish. Lower heat and cover. Simmer until fish has absorbed the sauce and flakes easily. Season with salt and pepper to taste.
In a stream, drizzle lightly-beaten egg over sauce. When the egg starts to curdle, lightly stir to distribute. Spoon onto a serving dish and serve hot.
Tip:
Almost any fried fish is good in this recipe. Try maya-maya, bangus, whole tilapia, or lapu-lapu. Some sarciado recipes are drier and call for less water but my family likes the extra juice to spoon over rice.

Yes. Galunggong, dalagang-bukid, tilapia and lapu-lapu are good substitutes.
