Scotties

Our fundraising at work is on its last leg. For the past two months we’ve been on a unified course to raise additional money to supplement the budget (which went to the food and hotel venue) our corporate provided for the employee Christmas party. Hopefully, we’d come up with enough to hire a DJ and purchase a few quality door prizes such as TV’s, VCRs etc. Yard sales, car washes and raffles have been some of our successful ventures.

This scotties recipe that I found in a magazine a few days ago will be my contribution to our bake sale tomorrow. I whipped up a batch last night, 45 pieces in all. Forty are already safely boxed in a plastic container. Unfortunately, the fundraising committee has to make do with $2.50 less as the other five were enjoyed this morning by my husband and me over a hot pot of joe. The chewy, crunchy scotties squares were the perfect wake-me-up treats!

Makes 9 Servings

1 cup all-purpose flour
1 cup chopped walnuts
1 large egg
1/2 cup butter
1/2 cup brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
1 pinch salt
1 tsp baking powder

melt butter and sugar add chopped nuts, flour, baking powder, vanilla and salt

Heat oven to 325 F.
In a sauce pan, melt butter, brown sugar and granulated sugar over medium heat, stirring constantly, around 5 minutes.
Remove from heat and transfer into a mixing bowl. Alllow to cool, around 5 minutes.
Whisk in egg.
Add flour, chopped nuts, baking powder, vanilla extract and salt.
Continue to whisk until blended.
Line a 9″ square baking pan with aluminum foil, leaving extra 2 inches over opposite sides.
Spoon and spread batter onto pan.
Bake for around 25-30 minutes.
Allow to cool on a rack.
Slice to 9 squares.
Remove from foil.

TIPS:
1) Try other types of nuts such as pecans, macadamias, or almonds for variety.
2) Scotties can be stored in room temperature for up to a week.
