Hi! I tried this with pork belly(I bought the meat before I saw the recipe thinking it was closest to the meat used by my favorite Filipino place) and it was *great!!* I've never tried making sinigang before, but this recipe worked well, aside from not having daikon radish, gabi roots, eggplant or kangkong (Hmm. Maybe saying I tried this recipe is a bit of an overstatement....more like I loosely based a soup on this recipe.... I live in England now and the best I could manage was red radishes and turnips(actually worked very well, flavor wise), potatoes ( I wish I'd known what those fibrous-looking tubers were when I could still find them-since I never tried them knowingly I guessed about the potatoes) and bokchoi instead of the kangkong. The eggplant looked sad, so I skipped it. ) The only glitch was you don't mention when to add the okra( 'lady fingers' over here). I guessed to add it with the chile pepper, and that seemed to work. I'm definitely going to try some of your other recipes!!

Coolcat,

Hahahaha! I know the idea of eating tails can be repulsive to some. But actually, beef oxtails are very popular and demand a high price. Go figure!

The broth looks so rich and flavorful. You are right...sinigang is best with lots of bones and fat. My favorite is sinigang using neckbones but I've never tried tails before.
