How to Make Moist Cupcakes

1) Add 1 or 2 tbsps of mayonnaise or sour cream to the batter.
2) Substitute applesauce or puree fruit in place of oil in the recipe.
3) Add pudding to the mix. Chocolate cake=chocolate pudding. Yellow cake=vanilla pudding.
4) Increase quantity of oil or egg.
5) Replace half of liquid with soda pop or 7-up.
6) Use milk instead of water in the recipe. Decrease baking time from that suggested by recipe.

I found this at www.recipezaar.com after that fiasco with my cupcakes. And believe me, these cupcakes will not fail to impress-very soft, almost spongy! I left them uncovered in the refrigerator overnight and they were still moist the following morning.
