How to Make Moist Cupcakes

Add 1 or 2 tbsps of mayonnaise or sour cream to the batter.

Substitute applesauce or puree fruit in place or part of the oil in the recipe.

Add pudding to the mix. Chocolate cupcake=chocolate pudding. Yellow cupcake=vanilla pudding.

Increase quantity of oil or egg.

Replace half of liquid with soda pop or 7-up.

Use milk instead of water in the recipe.

Decrease baking time from that suggested by recipe.

Add pureed beets to chocolate-flavored cupcakes.


Ultra Moist Starbucks Chocolate Cupcakes w/ Cream Cheese Frosting

I found this at www.recipezaar.com after that fiasco with my cupcakes. And believe me, these cupcakes will not fail to impress-very soft, almost spongy! I left them uncovered in the refrigerator overnight and they were still moist the following morning. The only modification I did was substituting hazelnut extract for the vanilla and cream cheese frosting instead of buttercream. Read more
