Unbelievable Peanut Butter Cookies
Perfectly-named cookies! My cook at work discovered this peanut butter cookie recipe on the packaging of our C&H granulated cane sugar. We tried it for one of our parties and have been using it regularly as part of our patients’ morning coffee social ever since. Unbelievably easy, this 2 1/2 dozen production size is done in less than 40 minutes from start to finish!
Makes around 2 1/2 Dozen
1 cup peanut butter
1 cup granulated sugar
1 large egg
1 tsp vanilla
additional granulated sugar
Preheat oven to 325 F.
Combine peanut butter, sugar, egg and vanilla until thoroughly blended. Cover and chill in refrigerator for around 15 minutes.
Drop by teaspoonful 2 inches apart onto cookie sheet. Flatten dough with bottom of glass or tines of fork dipped in sugar.
Bake 14 to 16 minutes until lightly brown. Cool on rack.
