Unbelievable Peanut Butter Cookies



Perfectly-named cookies! My cook at work discovered this peanut butter cookie recipe on the packaging of our C&H granulated cane sugar. We tried it for one of our parties and have been using it regularly as part of our patients’ morning coffee social ever since. Unbelievably easy, this 2 1/2 dozen production size is done in less than 40 minutes from start to finish!

Unbelievable Peanut Butter Cookies

Makes around 2 1/2 Dozen

Ingredients

1 cup peanut butter
1 cup granulated sugar
1 large egg
1 tsp vanilla
additional granulated sugar

Procedure

Preheat oven to 325 F.

Combine peanut butter, sugar, egg and vanilla until thoroughly blended. Cover and chill in refrigerator for around 15 to 20 minutes.

Drop by teaspoonful 2 inches apart onto cookie sheet. Flatten dough with tines of fork dipped in sugar.

Bake 14 to 16 minutes, or until lightly browned. Cool on rack.

NO FLOUR IN THIS RECIPE IS NOT A MISTAKE!

TIP:
For chewier cookies, increase recipe to 2 eggs. Flatten dough portions and refrigerate uncovered for 30 minutes before baking.

    easiest biscuit recipe ever and I could not believe there was no flour in it. they smell divine when baking too! A real hit!
